They do like to sail heeled more than a modern flat bottomed boat.
Their stiffness does not come into play until they are heeled 15 degrees or so. Good choice on a great boat. They handle heavy weather nicely and heave to with the best. The cape dory owners association has a very active site and there is an active livaboard member with a 36 so. Newfoundland is a great cruising ground. It’s no small journey though. I think with the cutter rig it would be suitable for single handling.
